White Chocolate Ganache Cake Recipe

This cake is an extra-decadent dessert that uses multiple kinds of chocolate.

The top is made of a smooth and rich ganache, with white chocolate spread throughout the cake and on top of said ganache. This makes the cake not only visually striking, but pretty darn tasty, too.

What You Need to Make It

To make this cake you’ll need things like chocolate, cream, and your favorite strawberry cake mix.

The chocolate you use doesn’t matter as much as its size. Chocolate chips work well, but you can also use chopped bar chocolate. Either way, you want it to be in relatively small pieces so it melts easily.

Your favorite cake mix should work great here. You don’t necessarily have to use strawberry, but I like the flavor and visual appeal, so that’s what I used.

For the cream, anything sold as “heavy cream” or “heavy whipping cream” should work. I wouldn’t use half-and-half, and I definitely wouldn’t try milk, either.

Both would probably be too thin for this to work. If you’re watching your calories, I recommend taking a smaller portion – and maybe sharing with a neighbor 😉

How to Make White Chocolate Ganache Cake

The first thing you should do when making this cake is shred the chocolate. You could use a manual grater, but it’s pretty laborious compared to something like a food processor.

You’ll also want to make the ganache at some point – ideally just before the cake is done. If you make it too early, the ganache may harden/set before you can add it to the cake.

Of course, you’ll also need to make the cake mix. Just follow the instructions on the box, but be sure to add the white chocolate before mixing.

Finally, you’ll bake the cake according to the package directions. Add the ganache to your finished cake, then allow to cool before serving.

1 15-oz box of strawberry cake mix*

1 cup chocolate chips, 168 grams

2/3 cup heavy cream, 150 grams

4 oz bar of white chocolate**


Grate*** the chocolate bar, then prepare the cake mix as directed (without the baking – yet!). Add most of the grated chocolate to the cake mix, pour into prepared pan, then bake according to package directions.

Once the cake is almost done, heat the cream in a small sauce pan set over medium heat. Add the chocolate chips to a medium heatproof bowl, then set aside.

Once very hot, add the cream to the chocolate chips. Continue stirring for 1-2 minutes until the sauce is glossy and smooth. If the cake isn’t done, leave the ganache on low heat, stirring occasionally, until the cake is finished.

Pour the ganache over the finished cake, then allow to cool completely. Once cooled, add the remaining grated chocolate over top and serve.


* This should be enough cake mix to make a 9×13 inch cake. Remember that you’ll need the ingredients asked for on the box (eggs, oil,) in addition to everything else.

** You can also use the same amount of white chocolate chips and skip the grating entirely. While the picture includes two bars of chocolate, I decided one bar was enough after the fact.

*** I think an electric grater or food processor would work best here. You could do it manually, but it would be much more time-consuming with comparable results.
